Gellan Gum
Gellan gum dry powder is beige in colour, without special taste and odour, and decomposes at about 150°C without melting. It has good heat and acid resistance and high stability to enzyme. Insoluble in non-polar organic solvents, insoluble in cold water, but slightly stirred that is dispersed in water, heated that is dissolved into a transparent solution, after cooling, the formation of transparent and solid gel. Soluble in hot deionised water or low ionic strength solutions in the presence of an integrating agent, aqueous solutions are neutral.
