Sodium bicarbonate, commonly known as baking soda, is a white, crystalline solid that often appears as a fine powder. It is
odorless and has a slightly alkaline taste. The compound is water-soluble, with a solubility of about 9 grams per 100 milliliters
at room temperature. Its molecular weight is 84.01 g/mol. Sodium bicarbonate has a melting point of 50°C (122°F), at which it
begins to decompose, releasing carbon dioxide and water vapor. It has a density of approximately 2.20 g/cm³. When dissolved
in water, it forms a mildly alkaline solution, which can act as a buffer to maintain stable pH levels. The substance is stable under
normal conditions but can react with acids to produce carbon dioxide gas, a property that makes it useful in baking, fire extinguishing,
and various cleaning applications. Sodium bicarbonate is also non-flammable and non-toxic, making it safe for use in many household
and industrial contexts.
