Pyruvic Acid, with the molecular formula C3H4O3 and the simplified structural formula CH3COCOOH, formerly known as Brenztr aubensure, is one of the intermediate products involved in the basic metabolism of the entire organism. The color darkens in the air. When heated, it slowly polymerizes, is highly reactive, and easily reacts with nitrides, aldehydes, halides, phosphides, etc. It participates in the biochemical synthesis and metabolism of sugars, colloids, amino acids, proteins, and alcohol fermentation in organisms. Acetoacetate can achieve interconversion between sugars, fats, and amino acids in the body through the acetyl CoA and tricarboxylic acid cycles, thus playing an important pivotal role in the metabolic linkage of the three major nutrients.

Application:
1. It is the main raw material for the production of tryptophan, phenylalanine, and vitamin B, the raw material for the biosynthesis of L-dopa, and the initiator of ethylene polymers
2. Acetoacetate is an intermediate of the fungicide Thiabendazole.
3. GB 2760-1996 specifies the permitted use of food flavorings.
