Xanthan gum
Xanthan gum is a high-molecular-weight polysaccharide produced by the fermentation of carbohydrates with the bacterium Xanthomonas
campestris. It is widely used in various industries, including food, pharmaceuticals, and cosmetics, due to its unique physical properties.
Xanthan gum is a white to cream-colored powder that is soluble in both hot and cold water. It forms viscous and stable aqueous solutions,
even at low concentrations, and exhibits pseudoplastic rheology, meaning it flows easily under low stress but thickens when stressed or
agitated. In addition to its thickening and stabilizing properties, xanthan gum is highly efficient in suspending solid particles and in preventing
the settling of suspended particles. It has excellent compatibility with other gums and hydrocolloids, making it a versatile ingredient in
complex formulations.
