and increasing carbon dioxide, MAP slows down the growth of aerobic bacteria and oxidation processes. Nitrogen, an inert gas, is
often used to replace oxygen and prevent package collapse by maintaining internal pressure. The permeability of packaging materials
to these gases is crucial; materials like polyethylene and ethylene vinyl alcohol copolymer are commonly used. The effectiveness of
MAP depends on factors such as the type of product, its respiration rate, and storage temperature. Proper sealing of the package
ensures the stability of the modified atmosphere, preventing gas exchange with the external environment. Overall, MAP's physical
properties significantly enhance the preservation of food quality, freshness, and safety by controlling the internal atmosphere within
the packaging.
